Persistent Drive on MCS Golden Image for Non Persistent VDIs to capture logs

I have a requirement to have a small (10-20GB) persistent drive added to my Non Persistent VDIs for log collecting.  Redirecting the logs themselves is not a problem, creating a drive where the data persists after a reboot is.   I have seen this done in the past using Nutanix but now I am using VSphere and I am struggling to replicate.

From what I am reading MCS doesn't typically support 2 drives but can any one help me please?

Is it a case of adding 20GB to the HDD of my Golden Image VM in VSphere then using Disk Management inside the Windows OS to shrink the system drive and create a new volume ?

Thanks Folks
