Is DTLS used by the VPN?

Steven's Tech Paper is a great read on this topic, especially the "Gateway with SAML" (p. 27-28), where he explains the two options. I used to configure just one Gateway vServer (type SSL) and just tick the DTLS box, but you can also add a separate vServer (type DTLS) to control the cipher suites.

Julian also referred in his post to the Ferroque blog that goes quite deep in to the subject.
